There are 31 coffee-growing regions in Brazil where 46 different varieties are grown, many of which were discovered and developed in Brazil.
Varieties
Each coffee-growing region grows different varieties, including Catuai, Mundo Novo, and Icatu. Each variety grows at different speeds and in different ways, which directly affects the size and density of the bean, and therefore how it roasts.
Pulped natural coffee
These coffees normally have the body of a natural coffee and the sweetness and acidity of washed coffees.

Process
Originally called Cereja Descascada or “peeled cherry”, this process involves removing the skin of the fruit before letting the coffee dry with almost all of the pulp still on the beans. It’s essentially a middle ground between the dry and wet processing methods. During the natural (or dry) method, the beans are dried entirely in their natural form, while the washed (or wet) process sees all of the soft fruit residue, both skin and pulp, removed before the coffee is dried.

This hybrid variety makes a sweet cup with bright acidity. Its name comes from the indigenous language of Guarani translating to “very good.” Catuai remains popular in Brazil, as well as being grown in countries such as Honduras, Costa Rica, Guatemala, Hawaii, Cuba, and many others.
Sweet, delicate-bodied, and complex, Yellow Bourbon has a lot to offer. The variety had come from the natural breeding of Botucatu’s Yellow and Red Bourbon, and the second that the plant could be a natural mutation of Red Bourbon. In recent years, the demand for specialty coffee has brought complex, high-quality coffee into fashion. In 2005, the IAC picked up studies of Yellow Bourbon again, with research into strains with higher yields. In the 2017 Cup of Excellence Brazil, samples of Yellow Bourbon were cupped at 92.33.

Cerrado Mineiro is a large region in the state of Minas Gerais in southeastern Brazil.
The region’s farms sit between 800 and 1,300 m.a.s.l., and are predominantly flat. There are well-defined seasons which means cherries typically ripen at the same time. The coffee is known for its intense aromas, notes of caramel or nuts, gentle citrus acidity, medium to full body, and long-lasting chocolate aftertaste.
It is also the first region in Brazil to receive protected Designation of Origin status, meaning coffee labelled “Cerrado” has to actually come from Cerrado.
